Wellness Pathway #221
Eat Fresh

There are those who take eating fresh food to an extreme, eating no cooked food whatsoever. To learn more, you can visit Web sites and read books devoted to "raw vegetarianism," promoting the health value of eating fresh food that is never heated beyond 105 degrees Fahrenheit (41 degrees Celsius). By avoiding higher heat, we destroy less of what's good and healthful in the food we eat.

For better or for worse, the average person is not going to follow this course of action. Still, we can make a practice of eating fresh foods on a regular basis. The food pyramid of the Mayo Clinic puts fresh fruits and vegetables on the bottom of the pyramid, as the solid base of a healthy diet.

They recommend a minimum of 3 servings of fresh fruit and 4 servings of fresh vegetables per day. They set no maximum and recommend a wide variety in order to optimize their nutritional value. Growing your own or purchasing from local farmers is a great way to be sure the fruits and vegetables are truly fresh.

Beyond fruits and vegetables, it's also important to drink fresh beverages. Whereas some nutrients, such as calcium in fortified orange juice, are stable through the shelf life of the product, other nutrients, such as Vitamin C, deteriorate quickly and won't last more than a few days. The healthy antioxidants in tea are another case in point. The fresher the tea, the higher the antioxidant value.

Coaching Inquiries: Do you eat at least 7 servings of fresh fruit and vegetables every day? How fresh are they? Do you drink fresh juice and tea? When was the last time you cleaned out your refrigerator?
